Spaghetti Aglio e Olio with a twist! (Spaghetti with Olive Oil and Garlic)

Last night, there was just two of us for dinner, and sometimes when there’s just two people, it’s hard to think of what to make (since we usually cook for five or seven!) – and especially last minute!

This dish I made is so quick and easy and a yummy treat! Here’s what I did!

➡️ Boil the pasta (al dente)

➡️ In a frying pan, add olive oil and chopped garlic and mix together over medium heat. Cook until garlic is browned.

➡️ For extra flavour, I added Sopressata Salami, since I love meat with almost every dish I eat! I chopped the salami into small cubes, and mixed it into the olive oil and garlic for about three minutes.

➡️ Grab three or four scoops (ladle) of the boiling water, and add it into the olive oil and garlic pan, then stir.

➡️ Once the pasta is done, strain, and add into the frying pan.

➡️ Mix all ingredients together, with the stove on low to medium heat, then add some ground black pepper. Stir, and then add grated Parmesan Cheese. For this dish, I also added Mozzarella Cheese, and Red Pepper Flakes!

➡️ Mix all together and voila! Served with a balsamic vinaigrette salad, garlic bread, and a glass of white wine!
