Penne Lasagne (Pasta A Forno)

Cooking (and baking) is a major part in our lives, and for some, it helps relieve stress!

I have never been one to follow recipes much, although I do at times. I tend to start and add a bit of this and add a bit of that. Taste it, and adjust accordingly! I know, it’s not professional, but it works for me. It’s easy. It’s fun. And that’s what cooking should be about!!

Here is a simple recipe, and a delicious meal for the whole family!!

My mother always made (and still makes) delicious lasagne. As the kids say, Nonna’s lasagne is always the best, and of course, I agree! ❤️

Even though I make the penne lasagne (Pasta a Forno), I do because it’s just as delicious and I find that with all the kids, it’s easier and quicker for me to make!

PENNE LASAGNE (Pasta A Forno)

➡️ Start by sauteing the chopped onion in olive oil.

➡️ Add garlic after the onion looks done enough.

➡️ Once the garlic is browned, add the ground beef (or pork). I usually use 2 lbs. The more meat, the better 😉. Throw in some salt, pepper, and garlic powder. Then stir, until beef is cooked.

➡️ Now it’s time to add the sauce. I like to have my sauce thickened and usually put 1 jar of strained tomatoes and 2 cans of tomato paste. Add 1 of those jars and 2 of those cans, of water.

➡️ Stir, and once it comes to a boil, add some more salt, pepper, and garlic powder. Also, add sugar (usually about a tablespoon), and basil. Stir everything together and let cool for about half hour on medium heat.

➡️ In the meantime, cook the pasta (I used penne) to 90% done, and strain. Keep some of the water though, because you will add three or four scoops into your sauce!

➡️ After you taste the sauce to make sure it is to your liking, add about half a bag of frozen peas. Stir and let cook for about 3 minutes. Then, I crack 4 eggs right in the sauce, and mix it all together. I let it cook for about another 3 minutes.

➡️ Make sure oven is ready, 350°F. Have the middle rack ready!

➡️ Pour some sauce into your pan. Add the pasta. Top it off with the rest of the sauce . Add in grated mozzarella cheese and grated parmesan cheese. I also added a chunk of grated jalapeno cheese (for some extra spice).

➡️ Mix everything together in the pan (this is the fun part!)!

➡️ After, evenly spread in the pan, grate some more mozzarella cheese to cover the top.

➡️ Cover with a lid and bake in oven for 20 minutes. Take lid off and broil for about 5 minutes or until cheese looks golden.

And done! Serve and enjoy! It’s always nice with some hot bread from the oven and a balsamic vinaigrette salad!
