Meatballs in a Sauce!

Meatballs – YUM!

Everybody’s got to love Spaghetti and Meatballs!! Here I share my recipe for my meatballs and how to make them so that they are delicious and don’t crumble!

I made this last night, while a different meal was cooking in the oven. I guess I was in the mood to share this recipe because a friend of mine reached out to me asking if I could show her the way I do mine. And here it is!!

I had fun with this one – singing and dancing! I even have a couple of appearances!! But in all honesty, tonight, this will be our dinner! I will be making spaghetti tonight and will be having these delicious meatballs to go along with it!

INGREDIENTS:
➡️ 2 jars of strained tomatoes
➡️ 2 cans of tomato paste
➡️ 2 lbs of ground pork (or beef)
➡️ Onion
➡️ 2 eggs
➡️ Breadcrumbs
➡️ Parmesan Cheese
➡️ Sugar
➡️ Salt & Pepper
➡️ Italian Seasoning

First, we are going to get the sauce ready! Start by sauteing the chopped onion in olive oil and add garlic after the onion looks done enough (usually just a few minutes on medium heat, stirring so that it doesn’t burn).

Now it’s time to add the sauce. I like to have my sauce thickened and usually put 2 jars of strained tomatoes and 2 cans of tomato paste. Add 1 of those jars and 2 of those cans, of water. You can adjust this to your liking!

Stir the sauce and once it comes to a boil, add some salt, pepper, and garlic powder. Also, add sugar (usually about a tablespoon), and basil. Stir together and let cook for about half hour on medium heat.

In the meantime, let’s get the meatballs ready!

In a bowl, mix the onion and garlic together, which are chopped finely. Then add the meat – I used ground pork for this one! I don’t ever add water to this bowl because I use egg. I have found that water doesn’t help it to stick as well as the eggs do – it just makes it more mushy. For this recipe – I used two eggs. Then you will add some breadcrumbs and Parmesan cheese. Add salt, pepper, Italian seasonings, and then the fun part begins!!

Dig your hands in the bowl and combine everything together!! You may have to check the consistency of it – I added some more breadcrumbs so that it wasn’t so moist – this makes it easy to roll into balls.

All of the flavours combined make this meatball really tasty – you are now ready to roll them into balls and add to the sauce!

After you taste the sauce one more time to make sure it is to your liking, add the meatballs, one by one, into the sauce. DO NOT STIR! You don’t want the meatballs to crumble apart.

Let it cook for about 40 minutes on low to medium heat, and voila – done! You are ready to have a beautiful dinner of Spaghetti and Meatballs!

  1. They look great! 🙂 I find that if there is time to pop the rolled meatballs into the fridge for about 30mins, they keep better shape when cooked x
