➡️ 2 chicken legs (with skin)
➡️ 1 red bell pepper
➡️ 1 yellow bell pepper
➡️ 1 Onion -diced
➡️ Garlic – minced in olive oil
➡️ Garlic – chopped finely
➡️ Olive Oil
➡️ Red Wine
➡️ Heavy Cream
➡️ Salt & Pepper
➡️ Italian Seasonings
➡️ Diced tomatoes
➡️ Strained tomatoes
➡️ Tomato paste
➡️ Pasta of your choice
For the chicken, you want to pat it dry once it is defrosted. Take off the excess water. Get the oil and minced garlic mixture and spread it all over the chicken leg. Add some salt and pepper, and rub it all in. Once that is done, flour the chicken – this will keep the juices in!
In a frying pan on medium to high heat, add olive oil and butter and heat until butter is melted. Take the chicken to the frying pan, and brown on both sides – about three minutes on each side. Take it out, and put it aside.
In the same frying pan on medium to high heat, add the onions, chopped garlic, peppers, and the onion. Combine everything together.
Add the heavy cream and the wine (red). Mix everything together.
Then, you are going to add your sauces. The diced tomatoes, the strained tomatoes, and the tomato paste. You do not need to add water. Mix everything together, and bring to a boil.
Once the sauce starts to boil, add your paprika, Italian seasonings, and salt and pepper for taste. Then add in your chicken. Cover and let cook for about 15-20 minutes. You don’t want to overcook or the chicken will not come out nice and juicy!
Have your pasta ready! You can place your chicken on your plate, then your pasta, and add some sauce! This dish goes great with a salad with balsamic vinegar! And of course, Italian bread!
