Arancini Casserole Recipe

Welcome back to my Creative Cooking with Sandra! First of all, if you haven’t seen it already, you can see my post/video on my Arancini (Rice Balls) here:


From this recipe, I decided to make an Arancini Casserole, since I figured it would be easier to make (and quicker!). It tasted the same, and the kids loved it! And truth be told, so did I!!!

Basically, you’re going to make your rice. I used Jasmine Rice and will continue to do so for this dish, because well, it’s delicious and has flavour! You will also need to make your meat sauce, in which I used two jars of strained tomatoes and one jar of paste. Then, I added garlic cubes, onion, peas, and some mushroom. The meat I used was a ground pork blend. Don’t forget that you will also need breadcrumbs and cheese! I made one out of Mozzarella cheese, and the other I used Jalapeno cheese. I also added Asiago and Parmesan cheese to top it off!

Here’s what you do!

➜ Find a baking pan, and add butter all over!

➜ Then, you’re going to sprinkle some breadcrumbs as the first layer.

➜ Add a layer of your rice, and sprinkle some more breadcrumbs!

➜ Add some of your different cheese – just a bit of each!

➜ Now it’s time to add your meat sauce!

➜ Over the meat sauce, you’re going to top it off with a full layer of Mozarella/Jalapeno cheese, and sprinkle some more of that Asiago and Parmesan cheese as well. YUM!!

➜ Pop it in the oven at 350 and let it bake for 20 minutes.

➜ Broil on low for about 3 minutes. Bring it out, and sprinkle some more breadcrumbs on top!

And you are done! Finito!

You can serve this dish with some nice Italian Bread as well as a salad – the choice is yours. But I will say, this is a pretty filling meal!
